Date loaf


  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 tablespoon butter or margarine
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon bicarbonate of soda
  • 2 cups self-raising flour or a mixture of self-raising wholemeal and white flour


  1. Grease a loaf pan, line the base and side with baking paper.
  2. In a bowl, put the chopped dates and pour the boiling water and leave to soften.
  3. Cream butter and sugar, in a bowl.
  4. Beat egg and add slowly to butter and sugar, beating well.
  5. Add 1 teaspoon of bicarbonate of soda to the date mixture then stir into the creamed mixture.
  6. Stir in sifted flour until well mixed.
  7. Pour the mixture into loaf pan. Smooth the surface. 
  8. Bake for 30-45 minutes for 180°C.  
  9. Lift into the cool wire to cool.
  10. Serve with cream cheese.
