Variety of Fruits

Fresh fruit is an important part of our everyday diet.  Various fruits supply us with nutrients essential for good health. There are endless variety of fruits that are available for use in the kitchen. Fruit is very versatile and although it is used mainly in the preparation of sweets or served as a dessert,it is also used in many menu when it combines with and enhances the flavor of fish, meats, poultry, vegetables. Fruit provides a range of colors, flavors and textures which can benefit many dishes on our menu.

To get the best of fruit, it is important to select, prepare and store it appropriately.  

Varieties of Fruits - Fruits are classified into various types:  
  • Citrus : Orange, Lemon, Grapefruit, Lime, Mandarin, Tangerines, Tangelos, Kumquats 
  • Melon: Rockmelon, Honeydew, Watermelon
  • Pomme: Apple. Pear, Quince
  • Stone: Peach, Cherry, Apricot, Plum, Nectarin
  • Vine; Grape, Passionfruit, Kiwifruit
  • Soft Strawberry, Blackberry, Loganberry, Blueberry Cranberry, Boysenberry
  • Tropical: Pineapple, Banana, Mango, Papaya, Guava, Dates, Custard Apple, Coconut
  • Exotic: Durian, Jackfruit, Lychee, Rambutan 
    When purchasing fruit, whether fresh or processed, there are a number of quality characteristics you will need to look for.  fruit should be:
    • Uniform in size and shape
    • Free of blemishes like specks and moulds
    • Good shape and color
    • Not over-ripe
    • Not wilted 
    Careful selection is also needed when purchasing different types of processed fruits, consider the following factors:

    • Frozen fruits should have no signs of partial thawing, freezer burns or excessive frost.  Look for juice which has run to the bottom of the pack and refrozen, dehydrated or dried -out appearance and discoloration.
    • When buying cans of fruits, it should have labels, be free of dust and corrosion and should be undamaged with no signs of denting, bulging or rust.
    • Dried fruit's shape and size should be uniform and they need to have a good color and free of moulds or foreign particles.
