Banana Bread

  • 1/2 cup butter  or margarine(125 g)
  • 1 1/2 cup sugar
  • 2 eggs
  • 2 cups plain flour
  • 1 cup mashed banana
  • 4 tsp milk
  • 1 tsp bicarbonate soda
  • 1/2 teaspoon salt
  • In a bowl put the butter and sugar and beat gradually until light and fluffy. Add eggs one at a time, beating well after each addition. Add mashed banana and milk and slowly mixed.
  • Sifted together in a large bowl: 2 cups plain flour, 1 tsp bicarbonate soda and 1/2 teaspoon salt. Add the dry ingredients to the banana mixture, stirring until blended.
  • Pour into the loaf pan or square pan. Bake 180C for 1 hour or until a skewer comes out clean when tested. Lift into rack to cool and cut into squares.
  • Serve warm with butter or whipped cream and fruit.
