Sweet potato muffins

Makes twelve

  • 1 large sweet potato
  • 3 cups plain flour
  • 1 tbsp baking powder
  • 1 egg beaten
  • 1 cup butter melted
  • 1 cup milk
  • ½ cup raisins
  • ¼ cup caster sugar
  • pinch of salt
  • 12 paper muffin cases
  • icing sugar for dusting

  1. In a saucepan, cook the sweet potatoes in boiling water for 45 minutes or until very tender.  Drain the potato and when cool enough to handle peel off the skin.  Place in a large bowl and mash well.
  2.  Meanwhile, preheat the oven to 2200C.  Sift the flour and baking powder over the potatoes with a pinch of salt and beat in the egg.
  3. Stir the butter and milk together and pour into the bowl. Add the raisins and sugar and mix the ingredients until everything has just come together.
  4. Spoon the mixture into muffin cases set in a muffin tin.
  5. Bake for 25 minutes until golden.  Dust with icing sugar and serve warm.
