Bittermelon


A vegetable with bright lime green in color with small lumpy scales, have a bitter flavor.  It is a common vegetables in Asia and also known as bitter gourds or bitter squash. 


It is eaten when very young but are extremely bitter mostly used in Chinese, Southeast Asian and Indian cooking.


Bitter melon is usually sliced and salted and boiled for several minutes to remove the bitter juices, then braised or stuffed with pork and served with black bean sauce or cooked in curries, added to stir-fries or other oriental dishes.
