Pavlova


Name for the Russian ballerina Ana Pavlova and made with a meringue base, slightly indented in the middle.

After cooking the pavlova is filled with whipped cream and fruit such as kiwi fruit, strawberries, passion fruit and mangoes.  

The inside of a pavlova has a gooey, marshmallow texture.  It's important to cook pavlova for the right amount of time-if syrupy droplets appear on the outside of the maringue, it is overcooked.
